Ok, for Steps Per using 1/8 microstepping (for smooth running) use 320 mm/min in mach 3 motor tuning.
this means it will output 320 pulses to move the axis 1mm.
Start with 1200 for velocity since you have 24 volts it should handle that.
If your hear a grinding, buzzing sound and it stops when moving the axis around that means it's missing steps, cut the velocity down some and try again.
65 in Accel should give about .3 seconds.
For your drivers, both will be set for 1/8 microstepping.

Your motors will both be very underpowered at 24 volts so don't expect great performance.
The formula for determining the best voltage for a stepper to be run at is square root of the steppers inductance multiplied by 32.
For the nema 23 this works out to 87.6 volts and 67 volts for the nema 34.
You can only give 24 mainly because of the M335 max is 30 volts, the M542 could handle 50.
That is still less than optimal but better which is why it's best to get a package that best matches all 3, stepper, driver and power supply.

The drivers are set for the max amperage they can give, the nema 23 is a 3 amp 425 oz/in stepper which the M335 can output so you'll get full torque from it.
The nema 34 is a 5 amp 1205 oz/in stepper but the M542 only outputs 4.2 amps which means the torque will be reduced, 1012 oz/in.
Bear in mind this is holding torque, once the stepper starts moving the torque drops the faster it goes and microstepping reduces it further still this is plenty for this size machine.
Once it's running smoothly there is an axis calibration function in mach 3 to fine tune the steps per.

Ok I've just put all this in place and the Z stalls instantly. The x and y move the DRO very quickly but are very slow to speed up. Any ideas ?

Slow to speed up is an accel value. The higher the accel, the quicker to its velocity. To a point, the point is lost steps.
A lazy man does it twice.

Before I go to supper I won't assume but ask to make sure if you set the native units to metric (MM's) in mach 3 config?

I've accelerated all the axis motors up and it seems to have fixed the slow start up. In the Z I altered something and it is fine now I think. No stalling. I think I reduced the velocity a tinny bit.
