I seen servo motors on cnc that have brakes to slow down motors when require for heavy loads ie gantrys and require stops

I have never yet seen a brake on a servo motor that was intended to slow it down, the common use is to prevent back feeding when servo is off, as in a heavy vertical axis etc.

The brake on a servo motor is to support a vertical load when the power is off. The brakes are not proportional like the brakes on a car. They are magnetically released like the emergency brakes on a train. They also are typically rated to survive only a few dozen revolutions before they burn up and fail in the safe (locked rotor) position.
